Hi Reader,

Valentine's Day in Finland is quite a tiny event compared to several other countries. We call it "Ystävänpäivä", "Friends' Day" and it is more like hanging out with besties and going to the cinema together at the price of one -offer.

Instead of crazy sales offers and overconsuming, I find that the Valentine's Day is a good day to make something cozy to feel good with your hubby or partner at home.

Let it be red velvet cake or a red frosting on a cupcake, something that you feel you have made with love and care to show your affection to your meaningful one.

I have been tweaking some of my recipes into the Valentine's mood. I like quite a lot the dark hot chocolate that has a velvety mouthfeel and whip up a cream with just a dash of beetroot juice (or a drop of food colorant) and decorate it with some dark chocolate flakes.

Another true favourite, when it comes to pink dishes, is whipped lingonberry porridge, which is naturally pink coloured! I started making it as a simple snack for my daughter, as I shared on Instagram a while ago, but you can simply make an upgraded dessert version with some vanilla custard or whipped cream and garnish with any berries you have on hand!
