Finally the Cinnamon Roll Day is here - the Saturday 4.10.!

Call me crazy but this is a one happy day filled with the lovely scent of cinnamon and cardamom. ๐Ÿค

This is the day that is the final step into the deep autumn time.

Cozy blanket, a cup of steaming dark hot chocolate, a good book and yes - a freshly baked korvapuusti, a cinnamon roll, in the other hand.

Also this year (like every year) at the traditional cafรฉ where I work, we have already yesterday piled HUNDREDS of cinnamon rolls into mountains and it truly doesn't help my Cinnamon roll addiction.

You can imagine how many cinnamon rolls will be baked and enjoyed today when it is THE day today...

But to master the beautiful shape of a Finnish cinnamon roll, a flatened roll shape, that you can see in the photo above, is to cut the rolled bar of dough into triangles first like this:

And then lift the top of the triangles, the narrow end upward on an oven pan covered with parchment paper, so that they look like tiny mountains.

This next step is the one that makes all the difference:

Push the top down with your thumb until the bottom so that the sides flatten and will reveal a kind of two swirled ear shapes.

(Finnish word for cinnamon roll is korvapuusti, which weirdly enough, means actually "a slap on the ear"..., so maybe this moment is where it comes from!)

Doesn't seem much, but now when they rise, the dough will expand to the sides into the traditional korvapuusti shape.

If you push too lightly the roll will rise upwards and not to the sides and the beautiful shape will not appear!

And as always with any Nordic buns sprinkle the pearl sugar after eggwash to garnish it traditionally.

It makes about 24-30 buns, so if you don't have that many eaters, just freeze them and enjoy during the autumn time. Just warm them well before serving to wake up all the lovely warm spices and to make it extremely delicious.
