Reader, we are already in the middle of the year and Sunday is summer solstice - the day when the daytime is the longest as it can get this year. Here in the Northern hemisphere it means almost no night at all - a white night.

So how to celebrate summer solstice? We Nordics love this festival of light so I have plenty of summery recipes and tips for you coming up and more listed in the June Bucket List too โ™ก.

What to drink

One of my true favourites is making a pinky rhubarb drink: Mix together homemade rhubarb juice, mix with elderberry cordial and squeeze of a lemon and top with sparkling water or tonic!

You can freeze some lilac flowers into the ice cubes and you have a beautiful summery drink!

Here are a few of my refreshing favourites. Prep them day before into fridge - just add the ice and garnish before serving:

What to eat

Anything that can be grilled (it's part of the summer right?). Loving the grilled vegetables!

Try to grill whole carrots (so that they are really charred and spread some honey or homemade dandelion honey (vegan-friendly) and sprinkle some chili flakes.

Slice a half of aubergine and grill it until super tender. Top with tahini or homemade almond butter (yum!) sprinkle some sesame seeds and chop fresh herbs on the top.

Boil fresh baby potatos. When done, grill the sides for the black stripes and serve with homemade cream chesee with chives โ€‹

What to do

The Nordic way the first thing tied to summer solstice and Midsummer is relaxing in sauna for sure. It is the perfect way to relieve stress and embrace the summer time combined with dipping into sea.

Create a natural beauty spa session with homemade brown sugar scrub or herbal foot bath with some drops of lavender essential oil or eucalyptus.

Blooming flowers are abundant so tie a flower wreath or gather seven different flowers to predict your future husband to make some Midsummer charms and dance in pyjamas in the nightless night (BTW that is SO fun!).
