✨ New recipe: Butter Eye Buns

Reader, the next in our Nordic bun recipe series is the delicious Finnish Butter Eye Bun.

As you can imagine with the name - they have a yummy buttery eye, like this:

The bun is made with the basic sweet wheat bun dough and the sweet treasure filling is a simple sweet mixture:

  • 150 g soft butter (room temperature)
  • 80 g caster sugar
  • 4 tbsp wheat flour
  • 4 tsp vanilla sugar

Mix these together, roll as a bar inside a parchment paper and let it cool down in the fridge.

When chilled, just cut the butter bar in small buttons.

Make a hole into the bun by pushing with your thumb and place the sugar-butter button inside.

Brush with egg wash and finish by sprinkling pearl sugar around the butter eye.

Super yummy, and freezes up to 6 months. When defrosting, just toss in the oven after making dinner in the oven and it is almost good as the baking day. Check here the whole step-by-step recipe for the butter eye buns.
