50 shades of Kefir (aaand THE Kefir Cake Recipe)

I'm not kidding, Reader, kefir is a one gut healing chameleon in the kitchen.

It goes into plenty of different healthy from-scratch recipes, almost anywhere where you would use yogurt in a slightly runnier form and beyond.

You can naturally support your gut microbiota with kefir.

I use it at breafkast for smoothies, or turn it into homemade cheese and cakes (link to the yummiest coffee cake with kefir later in the post as I promised you!).

Here are a few easy things to try this week in your kitchen:

Whip up a chia pudding with kefir

Mix kefir with chia seeds, and homemade apple sauce. Season with some cinnamon and cardamom.

Let it thicken and deepen the flavours in the fridge overnight. Add some crushed or flaked almonds on top in the morning.

Add kefir to your semolina porridge portion.

You can do half whipped lingonberry semolina porridge and half or less and mix it well or use kefir as a dressing or a decoration. It looks quite pretty with the pink-colored porridge and marbled white swirls with the kefir. ♡

Make some homemade cheese with kefir.

Easy spreadable soft cheese for baguettes and dips, hard kefir cheese block to slice on your bread, or cottage kefir cheese to crumble on your salads or soups.

Making kefir cheese is crazy easy with the quick pot over stove method that I use in the recipes.

Use up the milk kefir whey

The whey which comes as a byproduct when making kefir cheese is perfect for making kefir whey crêpes. You can also use the kefir whey or kefir milk to swap the almond milk used in these waffles!

Bake a spiced kefir cake

Simple yet super flavourful kefir spiced cake is my wintertime favourite! It is actually my grandmothers recipe that I have tweaked with kefir (she used to do with soured cream).

With the cardamom and cinnamon flavours it goes perfectly with the Rooibos chai latte or Moroccan spiced coffee!
